This salad can be made ahead of time. This does well sitting in a refrigerator for about 3 hours ahead of time. Since everything is so fresh it is hard to leave any longer. If left too much longer some of the ingredients can start to become soggy, and no one wants that. One of the great things about this salad is not only the taste, but also the variety in texture.
Varieties when making arugula salad:
- Cheese: feta cheese crumbles or shaved parmesan instead of, or in addition to the goat cheese.
- Nuts: pine nuts, walnuts or almonds
- Vegetables: carrots, broccoli, or cauliflower

Arugula + Micro Green Salad w/ Tomato and Cucumber
Ingredients
- 5 cups Arugula or Arugula Microgreens
- 1 cup Microgreens Mix
- 1 pint Grape Tomatoes halved
- 1/3 cup Goat Cheese crumbled
- 2 cups Baby Cucumber quartered
- 1/3 cup Red Onion finely diced
- 1/4 cup Dill Microgreens
- 2 Tbsp Olive Oil
- 2 Tbsp Lemon Juice
- Pepper to taste
- Slivered Almonds optional
Instructions
- Place the arugula, microgreens mix, tomatoes, cucumber, red onion, and dill microgreens in a large bowl.
- In a small bowl, whisk together the dressing ingredients: lemon juice, olive oil, and pepper.
- Drizzle enough dressing over the arugula to moisten it, then toss to combine.
- Sprinkle crumbled goat cheese and almonds, or any desired nuts, over the top. Serve immediately with a drizzle of extra dressing as desired.
